O movimento deve ser Eta, logo deve ser possível fazer a sugestão do Adriano. Todos os meus Tags chrono quartz (movimento Eta e todos também com 7 ponteiros) permitem esse ajuste alterando a configuração dos ponteiros na reinicialização do chrono.

After a battery change, or if the function should be affected by a severe
knock or exposure to a strong magnetic field, the hands of the chronograph
should be reset at zero (starting point).
Resetting the seconds-hand and the 1/10th-second register:
1. Put the crown to position 3 (this position stops the watch)
2. By means of short, successive pressures on the button, turn the hands
step by step back to zero:
Button A: works the seconds-hand
Button B: works the hand of the 1/10th-second register
Resetting the hours register and minutes register:
1. Put the crown to position 2
2. By means of short, successive pressures on the button, turn the hands
step by step back to zero:
Button A: works the hours register
Button B: works the minutes register
Note: Do not keep the crown in position 2 for more than 20 minutes (loss of
hour).
Remember always to push back the crown and screw it in to
position 0.

Não há problema nenhum. Aliás, porque não desalinha propositalmente a posição de zeramento para deixar do jeito que você quer? Assim, ele "zerará" sempre na posição que você gosta.
Não sei qual a máquina exata do seu modelo, mas normalmente dá para fazer isso que falei. Nos segundo e terceiro estágios da coroa, se pressionar os botões, pode mudar a poisção de zeramento do crono. Isso serve, na prática, justamente para acertar a posição de zeramento, caso ela saia de posição após uma troca de bateria, por exemplo.
